            It's about that time of year, again. 

Yeah... that'd be "#Thanksgiving" – a uniquely American holiday with historical roots which originated with the "Pilgrims," who were settlers to the "New World" whom also sought religious freedom. They founded Plymouth Colony in 1620.

The holiday is celebrated with a traditional meal, often consisting of turkey, dressing (sometimes also called "stuffing") which is a crumbled baked bread/cornbread dish often combined with sausage, mushrooms, and/or turkey & giblets (the heart, liver, and gizzard) with gravy, baked sweet potato and/or pecan pie, and/or pumpkin pie, and/or casseroles of the same type, jellied cranberry sauce, freshly baked breads, green beans, Brussels sprouts, candied yams (sometimes also called sweet potatoes), mashed potatoes, and other root vegetables, with an abundance of raisins, carrots, celery, nuts, apples, and so much more. It's truly a cornucopia!

The turkey can be, and is, cooked in a variety or ways, with the traditional being in an oven. Of course, they are also deep fried (a technique which originated from Louisiana), and can be pressure cooked. 

This particular turkey – a LARGE bird – weighs 23 pounds, and is being prepared in a brining solution before being cooked in the traditional manner, albeit in a cooking bag. 

The brining process involves allowing the bird to soak for several hours (it will soak for at least 1 full day - 24hours, and more like 36 hours) in a highly salty saltwater solution to which other flavoring ingredients may be added. This particular bird is in a 5 gallon container, which has about 2.5 gallons of water (the balance being displaced by the bird), into which has been dissolved a full container of salt (~2 cups+/-, or 26 ounces, 1pound 10 ounces), 1 cup brown sugar, 2c vinegar, 1Tablespoon each sage, rosemary, thyme, garlic powder, turmeric, 8-10 bay leaves, 2T whole peppercorns, 2T freshly ground black pepper, 1 sautéed red onion, 1/2 white onion, 2 lemons & peels, 2 orange peels only, and 4 small branches cedar sprigs.
