Kitchen science - a photo on Flickriver

Kitchen science

            I cooked artichokes two days in a row. The glass on the right has the water from the first night's artichoke, while the glass on the left has the water from last night's artichoke. Apparently, the water turns bluer the farther out from the time of cooking. I wonder what that's all about?
