Pumpkin Challah - Sliced - a photo on Flickriver

Pumpkin Challah
(based on the recipe on MedicineNet)

1/2 cup warm water
1 pkg yeast (@ 2 1/4 tsp)
egg substitute equiv to 1 egg (I used Ener-G Egg Replacer)
1 T oil
2 T agave nectar
1 cup canned pumpkin
1 tsp salt
2 tsp pumpkin pie spice
2 cups whole wheat flour
2 cups unbleached white flour

Combine warm water and yeast and set aside for several minutes.

In large bowl, combine all wet ingredients. In separate bowl, combine flours and spices. Add yeast to wet ingredients and mix. Slowly add dry ingredients until a nice dough is formed. You may need to add a bit more flour for a good texture - I added about 1/2 cup additional flour since my dough was still abit sticky. Turn dough onto floured surface and knead. Form into round and place in oiled bowl, cover and allow to rise until double in size (about an hour).

Turn dough onto floured surface and knead again a few times. At this point, you need to decide if you want a 3-strand, 4-strand or 6-strand braided loaf. I did 6 for mine. Divide your dough into the appropriate number of sections and roll each section into a rope about 12" long. Braid. Place on oiled baking stone or baking sheet and allow to rise again until double in size.

Preheat oven to 350 degrees. Since I don't use eggs, I lightly sprayed the top of the loaf with oil though you could just pop it into the oven as is unless you want to sprinkle poppy or sesame seeds on top. Bake 40-50 minutes.

Allow to cool about 5 minutes before slicing. Enjoy!

There are a couple ways to braid a 6-strand loaf. I used this method of braiding since it's what I found first. There's also another really good video of how to do a 6-strand loaf using another method.

I used some of the leftovers to make French Toast. Mmmm!
