Carrot Raisin #Salad - h - a photo on Flickriver

            Believe it, or else... this was the VERY FIRST TIME I'd ever made this dish!

And frankly, it turned out PERFECTLY! 

As is my "style" when preparing certain dishes (especially those I've not made before), I'll find and compare numerous recipes to see how other cooks have treated the subject. This was one such case.

I looked through about a dozen, or less, recipes that, as I read them, were carbon copies of each other. (Is there anyone out there who doesn't know what "carbon copies" means, or refers to?)

But FINALLY! I found one that was NOT run-of-the-mill! So, using some additional ingredients seen in another similar recipe, and that one, I prepared this dish!

Again, it is per-fect-emundo! 

So, you're probably wondering "Is he gonna' dish, or not?"

Yes, I am. 

BUT! Before I do, here's a "caveat," of sorts: I don't typically pronounce volumes or quantities in recipes, especially in one like this. It's not only unnecessary, but the creation of a dish is a reflection of the artiste who created it, and a cook should make EVERY dish THEIR way. And, I do.

And so, without further ado...

A carrot raisin salad, at its most basic, contains: 
• Shredded Carrots
• Raisins
• Mayonnaise

But we're gonna' go for much more than mere "basic." We're gonna' put this baby OVER THE TOP!

So here's what else I added to it:
• Dried Cranberries, aka "Crasins"
• Celery
• Key Lime Juice
• Apple Cider Vinegar (ACV)
• A tad salt
• White Sugar
• Cinnamon
• Nutmeg
• Walnuts

Now again, exactly how much, is up to you. It's Player's Choice, and YOU'RE the player. It's YOUR dish, so make it YOUR WAY.

Don't like certain ingredient? Not a problem. Omit it. 
Want more of another ingredient? Do it. 
Want to substitute something? It's yours to do with your way.
Pineapple juice or orange juice would be a good substitution for ACV & lime juice. 
Want to substitute pecans for walnuts? Go for it!
Honey instead of sugar? Pour it on!
Make it your own!

But friends, I'm here to tell you... after setting in the refrigerator overnight, it has only GOTTEN BETTER, and the flavors have blended exceedingly well! The cinnamon has gotten a bit warmer, the ACV has tempered with the sugar, and oh... my... goodness gracious! 

It's DELIGHTFUL!😋
