Peach Peel Butter (Peach Skin Butter)

This stuff is delicious! It has the consistency of apple butter and the flavor of peaches! You'd never know it was made from peach skins

I used:
2 ½ lbs peach skins (from ½ bushel)
about 1 cup sugar maybe 2
about 2 tbsp lemon juice
½ tsp lemon zest
cinnamon stick
enough water to cover the skins

cook on low heat for about 6 hrs,

put through food processor and bring back to temperature

can for 15 minutes in ½ pint or 4 oz jars

yield: 5 half pints
