In Switzerland, this national dish is called "Gschwellti and Chäs". It used to be a poor people's meal because there was enough cheese, potatoes were grown on Bellevueplatz (in Zurich) and butter was always available. A dish which is quickly prepared.
It goes as follows:
Take the cheese and butter out of the fridge.
Wash unpeeled potatoes and boil in salted water.
Pour off water and put the hot potatoes with peel for example in a bread basket and cover with a kitchen towel so that they stay hot.
While the potatoes are cooking, all the cheese pieces and butter are arranged on a wooden board in whole pieces. Ready.
If you like, you can serve pickles, cornichon, mustard fruit, dried grapes, apricot jam and silver onions.
And how is all this eaten?
Potatoes with skin, gives a particularly delicious taste, halve, add butter flakes. While the butter on the potatoes melts, you cut off a piece of the cheese (the various cheeses). On the fork comes: 1 piece of cheese and on top a piece of the potato, with or without the above-mentioned additions ............. divine !!!!!
Who does not like the potato peel, can remove it naturally, with taste losses.
A dry white wine or a red wine (country wine) goes well with it.
This food is excellent when many people sit at the table. The work in the kitchen is very small. The remaining potatoes are excellent the next day for Rösti, potato gratin or fried potatoes. And now: GOOD APPETIT !
Y ahora: ¡BUEN APROVECHAMIENTO!
