Banana / walnut bread
Banana / walnut bread

Mom made an absolutely awesome banana / walnut bread.
It was gone in no time...

BOWL 1.
Beat 4 organic free range eggs.

BOWL 2.
Mix together: 2 cup of whole wheat flour (or spelt, kamut, buckwheat, oat, barley...)
3/4 teaspoon baking soda
1/4 teaspoon baking powder

BOWL 3.
Mix together : 4 ripe bananas
3/4 cup extra virgin olive oil
Juice of 1/2 lemon
1/2 cup rapadura (or don't put any as bananas are quite sweet)
1/2 - 1 cup chopped walnuts

Slowly (spoon after spoon) add contents of bowls 2 and 3 to bowl 1 while constantly mixing, until everything is well incorporated.

Bake for about 40 minutes at 375 F in a pan lined with unbleached baking paper.
