20200111_9770_EOS M-27 Kahawai in the smoker (011/366)

One of the two Kahawai (Australia Salmon) from two pics ago was prepared for cold smoking while the other was "hot smoked" in a methylated spirit fueled manuka sawdust hot smoker. The hot smoker takes 20-30 minutes while the cold smoker (using a Smokai smoke unit attacked to the side of a hooded bar-b-que) takes from 12-16 hours, but the resulting fish will store a lot longer than a hot smoked fish.

Once I took the pic I lowered the BBQ hood to make a semi-sealed unit.
