Mariana Preparing Tejate - a photo on Flickriver

            Tejate is a traditional drink made from grinding toasted maize, cacao, flor de cacao, the seed of the mamey fruit, raw brown sugar and other ingredients into a paste.  The paste is mixed with cool water and beaten by hand into a frothy, refreshing drink widely enjoyed in the valley of Oaxaca.  Making tejate from scratch is labor intensive.  Most people use a prepared mix, but Mariana, a Zapotec woman from the village of Santo Tomas Jalieza, always makes hers in the traditional manner.  It is the best tejate I've had.
