Reblochon de Savoie - a photo on Flickriver

            El Reblochon es un queso francés que debe su nombre a las características de la leche con la que se elabora, deriva del término saboyardo “re-blocher” y se refiere a la leche del segundo ordeño de las vacas. Al parecer, este queso empezó a elaborarse cuando los granjeros del macizo de Aravis, en el valle de Thônes y de Val d’Arly, tenían que pagar un impuesto sobre la leche que producían sus vacas, así que para reducir el pago que debían efectuar, ordeñaban a las vacas dos veces, la segunda era una vez que ya había pasado el administrador.
El queso Reblochon de Savoie se produce en Saboya y la Alta Saboya, cuenta con el sello de calidad AOP (Appellation d’Origine Protégée, antes AOC, desde 1958). Es un queso elaborado con leche cruda de tres razas de vacas de montaña, Abondance, Tarine y Montbéliarde.
