            1. Πάρτε το κατάλληλο μπρίκι. Υπάρχουν μπρίκια για ένα καφέ, μέχρι και τέσσερις. Αποφύγετε τα πολύ μεγάλα μπρίκια γιατί δεν θα κάνουν καλό καϊμάκι.
2. Βάλτε νερό στο μπρίκι με το φλιτζάνι ανάλογα με το πόσους καφέδες θα φτιάξετε. Προσέξτε να μην είναι ούτε ζεστό, ούτε παγωμένο.
3. Προσθέστε μια γεμάτη κουταλιά καφέ και ζάχαρη ανάλογα με τις προτιμήσεις σας.
4. Ανακατέψτε καλά και βράστε τον καφέ μέχρι να φουσκώσει.
5. Αν έχετε φτιάξει παραπάνω από ένα καφέ, θα σερβίρετε από μικρή ποσότητα σε κάθε φλιτζανάκι για να έχουν όλοι καϊμάκι. Στη συνέχεια συμπληρώστε τα φλιτζανάκια.
6. Οι βασικές παραλλαγές του καφέ ανάλογα με το πόση ζάχαρη/καφέ προσθέτετε είναι οι εξής:

    Βαρύς - 2-3 κουταλιές καφέ
    Ελαφρύς - ½ - 1 κουταλιά καφέ
    Γλυκός - 2-4 κουταλιές ζάχαρη
    Μέτριος - 1 κουταλιά ζάχαρη
    Ναι και Όχι - ½ κουταλιά ζάχαρη
    Σκέτος - Καθόλου ζάχαρη
    Βαρύγλυκος - 3 κουταλιές καφέ και ζάχαρη
    Γλυκηβραστός - 2 κουταλιές καφέ 3 ζάχαρη και ελαφρύ καϊμάκι.
    Με ολίγη: 1 κουταλιά καφέ, λιγότερο από 1/2 ζάχαρη

     Heavy - 2-3 tablespoons brown
     Lightweight - ½ - 1 tablespoon brown
     Sweet - 2-4 tablespoons sugar
     Medium - 1 tablespoon sugar
     Yes and No - ½ tsp sugar
     Plain - no sugar
     Varyglykos - 3 tablespoons brown sugar and
     Glykivrastos - 2 tablespoons brown sugar 3 and light cream.
     With little: 1 tablespoon brown, less than 1/2 sugar
