Sun-Dried Tomato Mac 'n' Cheeze (vegan)

'Cheezy' comfort food without the cheese: creamy like a childhood mac 'n' cheese, but adult-flavored with sun-dried tomatoes. It's 100% vegan; it's 100% from Isa Chandra Moskowitz at the Post Punk Kitchen.

Sun-Dried Tomato Mac 'n' Cheeze

▶ INGREDIENTS
1 15-ounce can coconut milk
3/4 cup sundried tomatoes in oil (it was about 1/4 cup of oil, if that helps)
2 tablespoons miso
1/2 cup nutritional yeast flakes
2 teaspoons onion powder
1 pound macaroni
Black pepper

▶ DIRECTIONS
☞ Put everything in a blender and, uh, blend. Until totally smooth.
☞ Cook noodles in salted water, drain them, and return to the pot.
☞ While still hot, add the sauce and mix with a rubber spatula.
☞ Taste for salt. (I didn’t need any because miso and sundrieds were salty.) Serve!

▶ NOTES:
☞ Salt the water in which you'll boil the pasta at about 1 1/2 teaspoons to 1 tablespoon per quart of water (more salt if finely ground, less for coarse salt).
☞ I used angel-hair pasta, adding sautéed diced green peppers and Vidalia 'sweet' onions to the dish, and garnishing with chopped stuffed green olives.
