Update: a few of you were asking how this was done
I shot a whole bunch of left-to-right shots of the plane as it passed Alcatraz; these on their own would be enough to get standard panoramas. I fed three of the plane passes into the photo merge tool in Photoshop (about 21 shots in all - using a cylindrical projection, which is Close Enough™), which put each aligned image on to a separate layer with a mask.

Unfortunately it does a pretty great job at removing most of the planes, so I had to work my way back from the top layer to unmask the planes one-by-one. I found that a lot of the planes overlapped, so the most pleasing configuration was the six planes as you see it - I totally removed the contribution of the middle pass as it didn't really fit anywhere.
