La lumaca del Giura Svevo deriva dalla specie Lumaca Romana (Helix pomatia): questo è dovuto al fatto che la Helix pomatia è sempre stata un alimento importante nella dieta degli antichi Romani. Il fatto è testimoniato anche dai numerosi scavi archeologici, in cui sono stati trovati diversi gusci di lumache. Con l’espansione dell’Impero Romano molte ricette per la preparazione delle lumache si sono diffuse anche in territori lontani dagli insediamenti romani. Le lumache della varietà Helix pomatia venivano allevate anche nel sud della Germania: la città di Indelhausen (nella valle del Lauter, nelle montagne della Svevia) era un centro rinomato in epoca medievale per l’allevamento di lumache. Quelle coltivate nella zona erano particolarmente apprezzate per la loro delicatezza, dovuta alle erbe diverse delle quali si nutrivano.

COOKED AND EATEN SNAILS

The Swabian Alb snail derives from the Roman Snail species (Helix pomatia): this is due to the fact that Helix pomatia has always been an important food in the diet of the ancient Romans. This fact is also evidenced by numerous archaeological excavations, in which several snail shells have been found. With the expansion of the Roman Empire, many recipes for the preparation of snails also spread to territories far from Roman settlements. Snails of the Helix pomatia variety were also bred in southern Germany: the city of Indelhausen (in the Lauter Valley, in the mountains of Swabia) was a renowned center in medieval times for snail farming. Those grown in the area were particularly appreciated for their delicacy, due to the different herbs on which they fed.
