2022: one photo each day. 032/365 Mini Victoria sponge cakes.

1st February 2022 :

Our Sunday treats at long last, although we did have a couple for our pudding/evening treat last night. Mini Victoria sponge cakes, and delicious they were too, even though I used raspberry jam instead of strawberry.

I did flatten the tops before putting them into the oven, as told in the recipe, but they still ended up rising well. So I didn't bother about the icing sugar on the tops, it would have fallen off.😄
