IMG_5358_Pan-seared steelhead - a photo on Flickriver

            Just a bit of oil and sea salt, lightly infused with ghost peppers, for just a touch of heat and brine to highlight and enhance the buttery umami goodness of the steelhead.

Steelhead has become my favorite fish: I don't have to decide between trout and salmon, as it tastes like a blend of the two, and lends itself to just being seared.
