Miniature Apple Tarts - a photo on Flickriver

When I made the Orange Sauce Tarts...I loved the pastry (which I had never tried previously) so much, that I immediately thought about trying apple pie type filling in it.
Well, finally I tried it! Amazing.
I love this pastry. I made them in a regular 12 hole muffin tin so you can sort of imagine the size.

It is an Olive Oil pastry instead of using lard or butter and is not flaky like pie dough. It is, instead, sort of firm on the outside and yet almost soft and more or less crumbly inside. It is amazing stuff really.
Apparently the Italians use it for anything and everything.... cakes, pies, cookies, tarts...
My go-to site (for the dough recipe) is "Ricette Fatte in Casa" ... that girl makes it all look so simple. I haven't seen her do any apple tarts yet.
Of course, as is usual, it isn't quite as simple as she makes it look, but this time was a bit easier than my first attempt. When a recipe just mentions 2 eggs...it is always going to be a bit of an experiment isn't it? How large are those eggs? how much extra flour will I add? should I add a bit more oil? ...etc.........
She always uses her hands as soon as she puts in the flour ...and, her fingers never become sticky with the dough....hers is always perfectly pliable and with no dough on her hands. Hmmmm.... but, I'll get the perfect ratio one day if I continue to experiment with the dough. And, I certainly will. Because it is a great texture and so lovely and light and tasty.
I also made some blueberry tarts because I didn't have enough apples to make enough for the amount of shells it made. They were ...uh.... not photo worthy really. Blueberries. Pagh. Always messy. Always dribble over the top. ... tasty, but, not great looking if you know what I mean.
A dollop of whipped cream on top fixed that ....
oh, yeah........ mmmmmmm.....
