Canard de Duclair

            Parfois surnommé l'avocat, à cause de sa livrée, il est à l'origine de la création de la célèbre recette normande du canard au sang. On raconte que celle-ci fut conçue suite à la mésaventure de quelques paysannes de la rive gauche de la Seine. En effet, pour transporter leurs animaux au marché de Duclair qui avait lieu chaque mardi, elles les entassaient dans des « mues » tant et si bien que certains étouffaient. Elles prirent l'habitude de déposer ces pertes aux cuisines de « l'Hôtel de la Poste ». Là-bas, la « Mère l'Amour », personnage local haut en couleur, faisait déguster le fameux « canard au sang à la mère Denise ».
