Ethiopian dinner

            with injera, a sour fermented flatbread with a spongy texture made of teff (a relative of millet) flour. It is the staple and central to any dining. The dark injera is made from wholemeal teff flour. Injera often comes with wat, prepared with chicken, beef, lamb, vegetables, and clarified butter.
