            I thought people in Australia were kidding when they said the way to cook poached eggs is different in the Southern Hemisphere. But I tried it both ways, and apparently they are right. 

The state of the art is that you add vinegar to the water, and when it boils you swirl the water round and round with a big spoon and drop an egg into the vortex. Here's the surprise. North of the Equator, if you swirl clockwise, the egg will distend. Swirled counter-clockwise, the egg coalesces into a lovely ovoid shape.
