This was an unexpected for me dish - somehow I was anticipating a thick, rusty, red chili-laden broth. 
I should probably tell you that invisible on this picture background was a bitter cold night, as unwelcome as it was unexpected, especially during the first few days of typically mild and sunny East Coast spring.  Regardless, I was craving a bowl of hot noodles, and  Nan Xiang Xiao Long Bao was one of the right places to be, no doubt.

Again, Chinese value noodles over broth and noodles here were simply outstanding - a bit thinner than their counterparts at "Biang!" or Liang's Kitchen, but expertly prepared. Every single thread was perfectly round and uniform in it's thickness - critical quality, really - miss it and some of the noodles would be either overcooked or undercooked; speaking of which - Nan Xiang Xiao Long Bao cooks their noodles to mildly soft, although far from mushy.

I was impressed by Nan Xiang Xiao Long Bao noodles, but I was even more impressed by their broth: light, delicate, appetizingly colored and crystal clear - not something omne typically gets to expect in Asian cooking, where are not typically clarified (there are exceptions to that rule, however). At the first spoonful I thought the broth was a bit underseasoned ( nothing a touch of soy couldn't handle though), although I was not so certain about that as my meal progressed; somehow green chili added floral taste and salinity, but not the heat I was expecting. In fact, the soup was on the mild side - pleasant and delicate, would be the best way I can describe it.

Nice done bowl of noodles, might I say - seems like Michelin inspectors agree: Nan Xiang Xiao Long Bao is Michelin recognized, whatever that means.
