Roast New Zealand Venison Loin, Cabrales Dumplings, Oyster Mushrooms and Salsa Verde

I have never been to Australia, yet this plate instantly made me feel somewhere in the Down Under. This dish has been on the Public menu since the very beginning, we were told, and I can easily see why.

Look at the venison: roasted just right and seasoned with some familiar and less so spices, the quality and natural taste of the meat was the natural leader of everything else on the plate. Seemingly simple salsa verde added complexity to the venison flavors, and Cabrales Dumpling brought invisible, yet so welcome musky notes - I just loved that hint of blue cheese flavors working in unison with the pristine meat.
