Cebu SuTuKil - Sinugbang Saang (Grilled Spider Shell)

            SuTuKil is a Cebuano mix of the words Sugba (grill,) Tuwa (boil,) and Kilaw (raw.)  You pronounce it soo-too-kill….and is not to be mistaken with the term “shoot to kill.”  While SuTuKil is clearly a cooking term, it is popularized by a place in Punta Engaño, Lapu-Lapu City, Mactan, Cebu, Philippines, where seafood markets are located.  Locals would buy the freshly caught seafood being sold in these markets and have neighboring eateries cook them in whatever way they like.  So when you say SuTuKil in Cebu, it always points to that place in Mactan. 

I remember years and years ago, we would bring our own eating and drinking utensils because sanitation and hygiene was a problem in these eateries.  Now, however, much has changed.  The eateries are more restaurant-like and you have a choice of air-conditioned or sea-breezed dining areas.  The prices of the seafood have gone up, too, and is not cheap!  Still, SuTuKil is only for the adventurous eater and not for the snobby and impatient.  You can’t exactly complain about the service but just wait for your food and enjoy it when it comes.  Ours took over an hour to get served.  Regardless, it is still a favorite place to eat!!
